Marinated Cucumber Salad

  • 1 large cucumber, peeled and sliced
  • 1/2 cup sliced red onions
  • 1 large tomato, cut into chunks
  • 1/2 cup red wine vinegar
  • 1 cup water
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • Fresh ground pepper to taste


  1. In a medium bowl, combine vinegar, water, sugar, and salt and stir to combine.
  2. Add cucumber, onions, and tomatoes to liquid and stir. Cover and refrigerate for at least 3 hours. Serve cold with fresh ground pepper.
